Microbiological Risk Assessment of Fisheries Products. This presentation will present basic principles of microbiological risk assessment in the context of the wide variety of risks related to the wide variety of seafoods. A range of risk assessments related to seafoods will be discussed to illustrate the range of approaches that can be used, and how the risk assessment strategy used needs to matched to the risk assessment question, or decision.
